Time for Dinner

Superfood Dahl with Rice & Crispy Baked Broccoli

End your day with a meal that will soothe your body and soul. Dahl is amazing the next day and can be frozen for up two weeks so feel free to double up!

 

Ingredients

1 cup red split lentils

2 cups of veggie stock

1/2 can of coconut milk

1 tablespoon of turmeric

Pinch of cinnamon

2 cardamon pods – optional but worth it!

1 teaspoon of cumin seeds

3 cloves of garlic

Thumb sized piece of ginger, grated

1 small onion

2 fresh tomatoes, chopped

A big handful of chopped kale

1 tablespoon of coconut oil

Rice – white, brown or red!

Broccoli – however much you wish!

Fresh coriander – optional but amazing!

Lets get cooking!

How to make it

Finely chop the onion, grate the ginger, crush the garlic and rinse the lentils.

Pre-heat the oven to 180 degrees

In a non stick saucepan add half of the coconut oil with all of your spices - turmeric, cardamon, cinnamon, cumin seeds and gently heat.

Add the onion, and soften. Once soft add the garlic and ginger.

Add the lentils. Stir to combine it all and then add half of the veggie stock, stir and then add the coconut milk.

Stir and allow to gently simmer so lentils begin to absorb the liquid. Use the remaining stock if needed to create the consistency you wish.

Add your fresh chopped tomatoes and kale.

You do not want to overcook your lentils until they are mush! They want to be soft but have some form to them still.

Bring to a very gentle heat while you cook the rest.

Add the remaining coconut oil to an oven tray and put into the oven.

Add your broccoli to the baking tray making sure you coat it in the coconut oil and add a little sprinkle of salt before putting into the oven for 15 minutes.

Cook your rice.

Once everything is cooked, stir your fresh coriander into your dahl, serve into a big bowl and enjoy!
