Annabelle specialises in vege-centric, creative plates of food which pack a nutritional punch without skimping on flavour. Having first trained at the renowned Ballymaloe in Ireland, she fell in love with cooking seasonally. Sje was lucky enough to learn using the best organic produce grown on the school’s farm and to this day that is how she loves to cook. From there she went onto catering for events in London! A fabulous learning curve but high stress. So, taking a step back, she enrolled on a nutritional therapy diploma to deepen her knowledge around how food could be used to nurture and heal the body.
She now uses this training to inform all her cookery practices and choices when cooking for herself and others. She is a huge advocate of mindful eating and really listening to ones body, not ignoring cravings but satisfying them in the healthiest way possible – and yes that means regular slices of cake in-between salads!
